Serves 4 to 6
2 tbsp vegetable oil
1 cup chopped red onions
5 cups thinly sliced red cabbage
11/2 cups grated apples
1 cup dry red wine
1/4 cup balsamic vinegar
1 tsp dried thyme
1 tsp salt
1/4 tsp ground black pepper
2 tbsp raisins
In a soup pot on low heat, warm the oil. Add the onions, cover and cook until they begin to soften, about 5 minutes. Increase the heat to medium-high, add the cabbage and cook, stirring constantly, for 2 or 3 minutes. Add the apples, red wine, vinegar, thyme, salt, pepper and raisins and stir until the liquid begins to simmer. Lower the heat, cover and simmer gently, stirring every 10 minutes or so until the cabbage is soft, about an hour.
Serve hot or at room temperature.
Variations:
Substitute red wine vinegar for balsamic vinegar.
For a sweeter dish, add 2 more tablespoons of raisins.
Add 1 teaspoon of rubbed sage.

Like the other Moosewood cook books, this one also does the former publications justice! Thank you for "going healthy", not that you weren't before. Moosewood not only provides wonderful recipes, but includes information on why foods are good for us and gives alternative ways to prepare a dish. I expect my copy of Cooking for Health will become as spattered and dog-eared from frequent use as my other Moosewood cookbooks are.
